Cava Nadal - Balsamic vinegar

Cava Nadal has a very limited production of balsamic vinegars made from late harvest grapes. The major difference with the vinegar of Modena is that it obtains its sweetness through the late harvest of their grapes, instead of boiling the must to concentrate the sugars.
