These olive oil-preserved Cantabrian anchovy fillets are hand-made by the Angelachu family in Spain, and are some of the best anchovies in the world.
The entire process from the cleaning of the skin and bones, through to placing the anchovies inside the tin or jar is entirely done by hand. Anchovies make a big splash in the flavour stakes, but they are not all created equal, quality is really important.
They have a beautiful aroma and presentation, a smooth texture and a balanced flavour - with a sweetness at the front of the palette followed by a smooth salty punch at the end.
